Yes! It’s such an easy salad to make.
It’s a staple in this household.
I grew up with my mother making this simple and beautiful salad regularly. Sometimes she just used cucumbers, tomatoes and onion. Sometimes she used olive oil instead of the yogurt. Sometimes she used sour cream.
The cucumber, tomato, onion, and avocado with yogurt was always my favorite combo so I’m sharing it with you!
It’s really simple. Ready?
Get all your veggies out.
Or are tomatoes fruit?
Cut the veggies all up. Toss in a bowl with the yogurt.
Top with salt and pepper to taste.
Wallah. Two white bowls full.

Sometimes I add in some feta cheese and eat the whole salad for dinner. So refreshing on a summer day. And so tasty as a side to any main dish. I love eating this Cucumber, Tomato & Avocado Salad with dishes like Russian Borscht or Soaked Rice & Chicken Pilaf because the salad only takes 5 minutes to make! This is especially wonderful if you’ve been cooking borscht all day!
- 2 medium Roma tomatoes
- 1 English cucumber, peeled*
- 1 avocado
- ¼ large onion (yellow or purple), minced
- ½ cup plain or Greek yogurt
- ½ teaspoon sea salt (or to taste)
- ⅛ teaspoon pepper
- Diced up the tomatoes, cucumber, and avocados. Place in a medium bowl.
- Add in the yogurt. Top with salt and pepper. Give it a good mix.
This recipe makes 2 full bowls, as shown in the picture. One bowl is usually one portion for me...but as a side to a big dinner that may be two portions. Having said that, this recipe will serve 4 people if served with a dish like Russian borscht (see Russian Borscht step-by-step tutorial with pictures)
